An Istanbul classic and a magical dining experience, Körfez is a must. Tucked away in a tiny cove on the Asian shore of the Bosphorus, just past the second bridge, Körfez offers simple but top-notch fresh fish dishes in traditional Turkish style, preceded by meze and small appetizer plates. The caramelized calamaricooked in olive oil with white wine, sugar, bay leaves, and cayenneis a delicious take on an otherwise blandly repetitive local starter, while the sea bass stuffed with shiitake mushrooms, chives, and spinach is also an innovative first course. The main dish to order is the sea bass baked in salt, which is served at the table with spectacular ceremony by solemn waiters who set the platter alight and literally chisel the fish out of its salty enclosure. Attire is smart, and getting there is simple from the dock at Rumeli Hisarı on the European side, where a water taxi crosses to the restaurant every half hour. The view is magnificent and the boat ride itself inexorably romantic and well worth the journey.
