While the typical Kenyan diet is heavy on staples like rice, beans, and ugali—a dense cornmeal mash none too pleasing to Western palates—hungry travelers need not despair. Nairobi is stocked with a cross-sampling of fine international cuisine, with a large Indian expat community spicing up the scene. On safari, upmarket lodges and campsites—complete with gourmet chefs—will redefine your idea of "roughing it." Along the coast, sumptuous seafood infused with Swahili spices sets the standard, accented by the fresh fruits—coconuts, mangos, papayas—that are the region's rich tropical bounty. Of course, brave souls can always sample the nyama choma—or grilled meat—that's barbecued with religious devotion around the country. You'll have to bring a hearty appetite, though: Most eateries sell hunks of goat and beef—and even crocodile and ostrich—by the kilo.
