Don't enter a Key West restaurant expecting white-glove service. This is a place for no-fuss, flavorful food. Fish is a staple, of course, either as sushi at Ambrosia or fried in a sandwich at BO's Fish Wagon. Conch fritters made with the minced mollusk—Key West's unofficial mascot—are also not to be missed. The best in town are doled out from the nameless stand outside the aquarium. Cuban food is also popular, given Key West's historic and geographic link with the island, only 90 miles away. The best places to eat Cuban are small local haunts like El Siboney. Don't leave without downing a few jolts of the sugary, fresh-made Cuban espresso known as a buchi, served at random cafés in grocery stores and laundromats (seriously). If you are looking for a dressier night out and an extensive wine list, Café Marquesa is a nice change of pace.
