Great local and regional produce, creative collaborations between top chefs, and myriad ethnic influences make for one of the world's most vibrant dining scenes. Melbourne is so multicultural that no particular ethnic cuisine holds sway. Expect terrific Italian, Greek, Turkish, Vietnamese, Chinese, Thai, Lebanese, and Arabic food. Regardless, much of your meal, as well as the fine wines that accompany it, comes from the surrounding areas. However, there's nothing parochial about it. Many top chefs visiting from Europe are so inspired by the quality and variety of fresh ingredients that they never go home.
