The walled city of Évora, a World Heritage Site in the Alentejo region, is a great destination for its whitewashed Baroque churches; gentle ambience; and now, on the outskirts of town, the Convento do Espinheiro, a lovely resort in a monastery dating from 1458. It has huge outdoor and indoor pools, a tennis court, and a full spa, so guests can mix a cultural discovery with a sun-and-spa getaway.
