Puerto Vallarta restaurants
Puerto Vallarta's restaurants are the setting for Mexico's most exciting dining scene, and the region is a culinary hub for the whole country. Chefs from Switzerland, Spain, Argentina, and Mexico have been migrating to Puerto Vallarta and the surrounding coast since the 1980s. These days, while the settings remain relaxed, competition between chefs is fierce. Thierry Blouet was one of the first to experiment with a regional fusion cuisine in Puerto Vallarta, using local ingredients for dishes that reference Mexican, French, and Asian techniques; he now operates three wildly successful restaurants, including Café des Artistes.
There's no lack of modest eateries in Puerto Vallarta, either. Mexico's abundant fresh seafood appears in tasty ceviches and platters piled high with grilled fish, lobster, pulpo (octopus), and shrimp. Vendors ply grilled fish on a stick on Playa de los Muertos, and every neighborhood has at last one modest seafood café. Cooks in small towns like Yelapa and Sayulita rely on fresh seafood and tropical fruits and veggies served with homemade tortillas, whole grain breads, and all sorts of spicy salsas.
