Justifiably or not, visitors mostly dine at the luxury hotels, in part because the majority of acclaimed restaurants are often found in them, and also because diners believe it's safe to eat the salads there (as many ingredients are often grown on-property, it usually is). But wherever you eat, do try to experience Rajasthani cuisine, which is distinct from many other regional Indian cuisines in part because of the area's desert climate. Dishes often include ingredients from tough, hardy plants such as lentils and other legumes, and normally are prepared using very little water. Also be aware of the fiery spices that help preserve the food under such harsh conditions.
