When this hotel overlooking Palma de Mallorca—originally a private palace dating to the thirteenth century—first opened in 1961, it was an instant jet-set compass point. Over the following 20 years, it became a favorite of the blazer-wearing British gentry but gradually followed its clientele into a genteel senescence. Fast-forward to a recent $27 million top-to-bottom renovation that has produced lovely landscaping and 164 rooms done finca style in shades of caramel, curry, and butter with dark-stained furniture. The hotel has two gorgeous pools and two excellent restaurants, along with one of Spain's best golf courses. One gripe: Charging $39 for a day's Internet access is outrageous.

When to go: Mallorca is especially lovely during the off-season—May through June or September through October—but is a worthy year-round destination.
