Son Brull, Pollença, Mallorca $$$$
Concierge.com's insider take:
Opened in summer 2003, this exquisite rural 18th-century conventturnedluxury retreat is yet more proof that Mallorca, and in particular the north, is becoming the place of places. The 23 rooms are carved out of generous white spaces striped with beams on the tall ceilings. Even the most modest grade has a Jacuzzi, Bang & Olufsen sound systems, DVD and CD players, and free Internet. Black and white soft furnishings and unobtrusive wood built-ins are cool backdrops to the gorgeous countryside views out the windows or from the terrace. In the acres of sculpted grounds are a pool with sybaritic patios and sun terraces and, of course, a spa. The restaurant, with its vaulted roof, old olive press, and menus based on organic local produce, provides destination dining for visitors from miles around (a typical dish would be roasted suckling pig served with sides of whole sweet potatoes and beet roots). Though it seems slick and runs like clockwork, Son Brull is the baby of a local family.
