The full bounty of the Caribbean cornucopia is on offer on the island of St. Lucia, even if most of the chief ingredients are imported from nearby Martinique and Barbados. Almost every resort has at least a couple of restaurants, either in beachside shacks or in terraced dining rooms looking out at the Piton mountains (such as Dasheene at Ladera resort and Tao at BodyHoliday). Hire a taxi and venture farther afield to try local restaurants in the capital, Castries (Coal Pot and Green Parrot). Or, charter a boat to access the dockside restaurants of Marigot Bay, including JJ's Palétuvier. Expect island goat, stewed conch, spiny lobster and prawns, and plenty of fish hauled fresh from the fishing boats and grilled with that Caribbean zest.
