Montana is a red-meat state, so menus are usually filled with superb beef and game dishes. Increasingly, however, restaurants are taking on a wider range of influences including Southern and Pacific Rim. (Thank—or blame—the second-homers and privacy-seeking movie stars). A trend of pushing local, seasonal, and often organic ingredients has also taken hold, making for some interesting and intensely regional dining.
